Gut Supporting No Bake Cookie Dough Bars

Have you ever found yourself standing in front of the fridge eating cookie dough from the container? Well, me too. That is why I wanted to make these guilt-free edible cookie dough bars. The recipe is 100% vegan and gluten-free so it’s the perfect post-dinner sweet treat.

By adding in the Just Thrive Probiotic you can support your gut as well as your brain with these dessert bars. Another bonus is that this recipe is made with almond flour and peanut butter, so it has added protein and nutrients as compared to conventional cookie dough.

When my nighttime cravings hit, these bars are my go-to since I don’t have to worry about waiting for an oven to preheat or any cooking time. I just mix the ingredients, pop them in the freezer to set, and enjoy!

No Bake Cookie Dough Bars

Prep time: 5 min
Freeze time: 10 min
Total time: 15 min

Servings: 10–12 bars

Ingredients:
Directions:
  1. In a bowl, combine the almond flour, maple syrup, peanut butter, coconut oil, vanilla, and salt.
  2. Mix until a thick dough forms.
  3. Fold in half of the chocolate chips.
  4. Spread the dough mixture onto a parchment paper lined baking tray and place in the freezer to set.
  5. In a small bowl, add the other half of the chocolate chips and 1 tbsp coconut oil. Melt in the microwave or using the double boiler method. Open up the two Just Thrive Probiotic capsules and sprinkle into the chocolate. Mix well.
  6. Remove the dough from the freezer and spread the melted chocolate on top.
  7. Place the bars back in the freezer for 10 min to set.
  8. Remove, slice, and enjoy! These bars are best kept in the fridge or the freezer.

I chose to use dark chocolate chips and peanut butter in this recipe; however, you could use any chocolate you like as well as any nut butter. Almond butter would be another great higher-protein option.
