Cooling Tropical Lemon Bars

Cooling Tropical Lemon Bars

Crust Ingredients:

  • 3 cups gluten-free, grain-free cereal (I use Unsweetened Love Bird Cereal) 
  • 1/3 cup coconut oil (melted) 

Filling Ingredients:

Instructions: 

  1. For the crust, smash the cereal in a food processor or in a zip lock bag. 
  2. Mix the crushed cereal with coconut oil until it’s well combined and crumbly.  
  3. Line a baking dish and pour the crumbly mix into the bottom, pressing it flat. Set the dish aside and move on to make your filling. 
  4. For the filling, put 1/2 cup of filtered water into a saucepan and sprinkle the gelatin over it. Then leave it alone for about 5 minutes so that it becomes spongy or gel-like.
  5. After 5 minutes, gently warm the water-gelatin mixture on the lowest heat setting to melt, stirring the whole time.
  6. Once melted, remove from heat, add the honey, and stir together. 
  7. In a separate bowl, mix the lemon juice, lime juice, Just Thrive Precision Prebiotic, Just Thrive Probiotic, and coconut milk. 
  8. Pour the gelatin mixture into the same bowl and mix until well combined. 
  9. Pour the filling onto your crust. (You don’t have to use all the filling.) Don’t worry if some of the cereal bits from the crust float to the top. 
  10. Place the dish in the refrigerator for a minimum of four hours to set.
  11. After four hours, take the dish out, cut into squares, and enjoy!
