Citrus Avocado Salad with Honey Mint Probiotic Dressing

Citrus Avocado Salad with Honey Mint Probiotic Dressing

Serves 2 🥑🥑

Ingredients: 

  • 1 Just Thrive Probiotic capsule
  • 1 large grapefruit
  • 2 small-medium blood oranges
  • 1 small avocado
  • ½ cup olive oil
  • ½ cup fresh mint leaves, loosely packed
  • 2 Tbsp honey
  • Juice from 1 small lemon
  • Dash of salt and pepper

Directions:

  1. Peel the grapefruit and blood oranges.
  2. Gently cut the citrus into slices with a serrated knife, cut off any remaining pith, and remove seeds.
  3. Cut an avocado in half, peel off the skin, and slice thinly with a sharp knife.
  4. For the dressing, add olive oil, mint leaves, honey, lemon juice, salt, and pepper to a blender, then open up a Just Thrive probiotic capsule and add the powder.
  5. Blend the dressing well.
  6. For serving, arrange the citrus slices and avocado and add the honey mint probiotic dressing.
